This Valentine’s Day skip the tacky heart shaped box of chocolates and whip up some Red Velvet Brownie Bites instead! They’re bite-sized decadence that you can gift or enjoy all to yourself!
(Makes 34-36 brownie bites)
1 ¼ cup all-purpose flour
¼ tsp salt
½ cup (1 stick) unsalted butter, room temperature
1 ½ cups sugar
3 Tbs unsweetened cocoa powder
2 Tbs red food coloring
1 ½ tsp vanilla extract
8oz white baking chocolate (you can also use semi-sweet or dark)
Preheat oven to 350 degrees F (176 degrees C) and butter a baking dish (13” by 9” or smaller).
(1.) Whisk together flour and salt in a bowl and set aside. (2.) In a large bowl, beat together butter and sugar until fluffy. (3.) Beat in eggs one at a time. (4.) In a small bowl, stir together cocoa powder, red food coloring, and vanilla extract until it becomes a smooth paste.
(5.) Add to butter and sugar mixture and mix until completely blended. (6.) Slowly whisk in flour mixture until just combined. (7.) Spread batter in the prepared baking dish and place in the oven. (8.) Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Place dish on a cooling rack for 1-2 hours or until completely cooled.
(9.) Once the brownies have cooled, cut away the crunchy outer edges and discard. And by discard, I mean eat them! Use a fork to rake the brownies until the entire batch is a crumbled mixture. Line a baking sheet with wax paper and set aside. (10.) Use a tablespoon to scoop out brownie crumbles and roll into a ball. (11.) Place on prepared baking sheet and repeat until mixture is gone. (12.) Next, add chocolate to a small saucepan and heat on low. Stir every few minutes until completely melted and smooth. Drop a brownie bite into the chocolate and roll back and forth using two forks. Let the excess chocolate drip off and then place back on the wax paper.
Add sprinkles or candies while the chocolate is still warm. Repeat with remaining brownie bites. Place baking sheet in the refrigerator for 1 hour to harden the chocolate. You can also make these the night before and let them chill overnight.
Allow brownie bites to come back down to room temperature before serving or package them up to give as gifts!
